This split-level cocktail bar focuses on seasonal flavours. Ruby is a bit of a sophisticated rabbit warren, situated in a historic townhouse opposite the parliament buildings and Thorvaldsens museum. Dating back to the 17th century. You can almost imagine a fisherman spending his hard-earned wages on a drop of liquor here. Meanwhile, back in the 21st century, Ruby has that typical Scandinavian interior. A light wood bar topped with pale marble, velvet upholstered, snug sofa’s and soft chandelier lighting.
