Mauro Colagreco, three Michelin stars and three new restaurants.
In the restaurant industry, according to The Michelin Guide, there are 2651 stars on planet earth. One hundred eighty-eight of those stars have been awarded to restaurants within the UK. Seventy-one of those UK eateries are in London. Therefore, if you find yourself in the gastronomic galaxy that is London, you must indulge in some of the city’s many fine dining options. Why not visit Raffles London at the OWO, based on Mauro Colagreco’s recipes? The Argentinian-born super chef, with three Michelin stars under his belt, has opened three restaurants at London’s newest luxury hotel. Perhaps even take a beautiful companion as your date to enjoy a night that is truly out of this world. After all, Mauro is known for basing his last restaurant’s menu on phases of the moon.
Get to know Mauro
For all you foodies out there, Mauro Colagreco will need no introduction. Mauro left Argentina to make his name in the country that created haute cuisine, France. Working under the incredible Alain Ducasse at the Hotel Plaza Athénée, he certainly honed his culinary craft. Mauro then enjoyed runaway success with Mirazur on the French Riviera. He has received numerous accolades and awards for his edible efforts. Three Michelin stars, the title of “Best Restaurant in the World” in the 2019 World’s 50 Best Restaurants list and a UNESCO ambassador award for biodiversity. He must have one hell of a trophy cabinet.
Whilst Mauro may charge astronomical prices for his exquisite food, his restaurants do not cost the earth. He doesn’t just battle single-use plastic use in his kitchens. Mauro works closely with local farmers and has adapted his cooking to his environment. He understands pest control and biodiversity. Interestingly, he considers himself a farmer. Furthermore, he is happy to adapt his menu. Lastly, redefining luxury and saving the planet, Mauro Colagreco is a superhero in chef’s whites.
“The goal is to change people’s mindset on these issues, to draw attention to the interdependence between all living things and the impact that our food choices have on the environment in which we live. The main challenge is to redefine the concept of luxury. What is true luxury? Being able to enjoy the flavour of a freshly harvested fruit or vegetable. From a living land, at its best: this is luxury, much more than foie gras or caviar. It’s a long path: first you have to win people’s hearts, then you can try to educate them.” – Mauro Colgreco.

Fine dining dinner date
Mauro has landed in London and opened three restaurants at Raffles London at The OWO. He oversees his namesake restaurant, Maura Colagreco, which is the jewel in Raffles’ crown of restaurants—fine dining brought to your table through ethical, sustainable practices. Mauro has collaborated with local farmers to ensure that produce is sustainable. Mauro Colagreco would be the type of dinner date venue where you would go all out to impress your stunning companion. A night to remember where you dress up and savour every moment as well as every bite.
An extra special touch by Mauro: these cards, which will arrive at the table between courses, depict the hero ingredients of the meal. These cards are beautiful illustrations of radishes, red cabbage, olives, and more. The back of the card lists the supplier and explains how your meal is ethically produced—a lovely keepsake for you and your dinner date to remember the evening by.
For a slightly more interactive, somewhat less stiff experience than your typical fine dining, Mauro’s Table might be a consideration—a private dining room for up to 20 guests. You and your gorgeous date will start with ceremonial hand washing before plates are served as if they were works of art. A little bit more intimate, yet a spectacularly theatrical way to indulge in Mauro Colagreco’s cuisine, with a direct view into the kitchen.
A more informal breakfast, lunch, or dinner date
Lastly, but by no means least, we have Saison. This is the all-day dining option that Mauro Colagreco has created for Raffles London at The OWO. Serving breakfast from 7 am, you can enjoy Mauro’s delicious meals here from early to late. Breakfast here is not to be overlooked. Perhaps one of the most comforting yet exquisite breakfasts in London. Everything is perfectly luxurious but incredibly simple—oeufs à la Coque, or boiled eggs and soldiers, to us Brits. Oysters and champagne, or just a piece of toast, are all available at Saison. Nothing is too much trouble, and it is undoubtedly a very luxurious, serene way to start your day.
Saison, the French word for season, means that you will be eating the freshest seasonal produce. The menu will change throughout the seasons, but always with a Mediterranean flavour—a much more relaxed option than the other two Mauro Colagreco fine dining options. Saison is currently serving pumpkin soup, Hereford beef and halibut. Saison would make a great lunch or dinner date venue.
